The Schwarzenbergkaserne is the largest barracks of the Austrian Federal Army in terms of area. It is located directly on the western city limits of the provincial capital of Salzburg in Austria in the municipal area of Wals-Siezenheim.
At 240 ha, the barracks are so extensive that they represent a separate town of the municipality. With the construction of the new commercial kitchen in the Schwarzenbergkaserne, the existing four catering facilities were combined into a new regional kitchen.
After its completion, the commercial kitchen will be able to supply approx. 2,200 people per meal with fresh and regional food. The kitchen is the “non-plus-ultra” of the commercial kitchen world with the latest cooking technology from Rational in wall-mounted design, dishwashing technology from Meiko and mobile food serving systems from B.Pro.
The Austrian Federal Army has set a milestone in the digitization of commercial kitchen technology and has digitally networked all devices – networking covers three essential factors in supply: consistent quality, HACCP documentation at the highest standard, 100% security of supply.
We at gastro total were the overall outfitter of the entire commercial kitchen unit here. Our scope of work also included the entire electrical connection and installation of the commercial kitchen appliances.
